Egusi Soup is a staple Nigerian dish mostly served at parties but also enjoyed as a homemade staple. It is made of ground melon seeds cooked with pepper blend, palm oil, bitter leaves and an assorted variety of beef and seafood. It is best enjoyed with some carb dishes: pounded yam, fufu, garri, rice.
